OYAKODON - VERY EASY!

Donburi rice bowls are quintessentially at the heart of Japanese cuisine. Thanks to their comforting flavors and ease of preparation, these traditional meals are still incredibly popular amongst home cooks in Japan and beyond. This quick and easy Oyakodon features tender pieces of chicken simmered in a sweet and savory broth and wrapped in a soft egg scramble to be served over a warm bed of rice. This simple & delicious donburi comes together in a single pan in just a few minutes, making it the ideal comfort meal for the weekdays.

INGREDIENTS

Serving Size: 2-3

  • 200g Chicken Thigh
  • 1 White Onion
  • 2-3 Eggs
  • 1tbsp Dashi (can use chicken broth as sub) 
  • 2tbsp Mirin
  • 1tbsp Sake
  • 1-2tbsp Soy Sauce
  • Cooked Rice
  • Sugar (splenda)
  • *Spring Onion (optional)

STEP-BY-STEP

  1. Combine chicken and sake in a bowl and set aside for 5-10 minutes while preparing other ingredients
  2. For the sauce,  combine dashi, soy sauce, mirin, sugar, and pepper to taste then mix
  3. To prepare the egg mixture, crack the eggs into a bowl and gently break the yolks using a pair of chopsticks. You want to ensure the eggs are lightly beaten with the egg whites still visible.
  4. In a small pan, add in the sauce and bring to a boil over medium heat. Add onion and cook until aromatic, about 1 minute. Add the chicken, then cook and simmer for about 3-5 minutes on each side.
  5. When the chicken is almost cooked through, pour the egg mixture evenly into the pan and cook for a few seconds until the edges are nearly set.
  6. Lightly scramble the eggs and cook for a few seconds more until the eggs are still a bit runny – the residual heat will continue to cook the eggs. Serve over a bowl of rice, garnish, and enjoy!

Japanese food used to intimidate me a lot because of how much seasonings it needs, hence why this recipe is under Beyond Basics, due to the need for sake, mirin, and dashi, and these aren’t easy to find, especially if you don’t have an Asian store near you like I do. If you do, then good for you! This is one of those recipes to try out those ingredients. But with the ingredients available, this recipe can be done in under 30 minutes. 

This chicken donburi is quick to make, nutritious, and so flavorful, making it one of my favorite meals to make during the weekdays – especially on when I am always craving for a meal that is warm and comforting, all without much hassle. To be fair, there are a lot of donburi bowls with the same procedure, such as Gyudon (Beef bowl), so this recipe works on most donburis. 

To serve, I highly recommend making a fresh batch of steamed rice as it will make a big difference in the overall quality of the dish. Since this recipe is quick to make, it will come together just in time for when the rice is ready to go!
