BEEF ENOKI ROLLS - CHEESY!

Cheesy beef enoki rolls are a new recipe for cooking beef sukiyaki, the best part of it is CHEESE! This recipe is inspired by the enoki rolls seen in most Samgyupsal restaurants, but with a fulfilling twist. It’s a perfect appetizer, side dish, or even a satisfying main course when paired with rice. While it may seem a little advanced at first, once you get the hang of rolling and searing, it becomes a recipe you’ll want to keep making.

INGREDIENTS

Serving Size: 1-3

  • 250g Beef Sukiyaki 
  • 100g Enoki Mushrooms
  • 2 Eggs
  • 2-3tbsp Soy Sauce
  • 1tbsp Vinegar
  • 1tbsp Honey
  • 1tbsp Seasame Oil
  • Garlic (minced)
  • Black Pepper to taste
  • Cheese of choice
  • *1 can of Kernel Corn (optional)

STEP-BY-STEP

  1. Cut the ends of the enoki mushrooms then divide into small pieces
  2. Wrap the enoki mushrooms with beef sukiyaki
  3. In a small pan, pan-fry beef enoki for a couple of minutes on each side
  4. For the sauce, combine soy sauce, vinegar, honey, sesame oil, and minced garlic then mix
  5. Add to the pan and add 3tbsp of water, let it simmer,
  6. Beat the eggs and add to the pan
  7. Add cheese of choice (and corn if available), cover, and let it cook for a few minutes 
  8. Add chopped green onion and/or sesame seeds for garnish, and serve!

Cheesy beef enoki rolls have been my latest obsession in terms of beef recipes. I also like serving it from the pan itself. The first time I made Cheesy Beef Enoki Rolls, I was both excited and a little intimidated. I had always seen beautifully wrapped enoki mushrooms in thinly sliced beef and wondered if I could pull it off. But as I started cooking, it wasn’t as bad as I thought it would be. 

What I like about home-cooked meals is the fact you can control how much of this and that you want to add. The magic of this dish lies in its contrast of textures: the delicate chewiness of enoki mushrooms, the tender, savory beef, the fluffy eggs, and the gooey, melty cheese that brings it all together. It’s a guilty pleasure for sure, especially eating it with rice!
