EGG FRIED RICE

This egg-fried rice is quick to make with instant rice. It’s easy to customize with other vegetables or leftover roast meat. This 3-ingredient egg-fried rice has been my favorite snack since I was growing up, it’s what we make when we have leftover rice from the day before.  A simple yet flavorful dish, egg-fried rice is the perfect way to turn leftover rice into a delicious meal. Each bite is packed with comforting flavors. This quick and easy dish is a go-to for busy days or when craving something satisfying and homemade.

INGREDIENTS

Serving Size: 2-3

  • 3 eggs
  • 2 cups day-old rice (cold)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ¼ tsp white pepper (or to taste)
  • 2 tbsp oil (for cooking)
  • 2 tbsp chopped spring onions (plus more for garnish)

STEP-BY-STEP

  1. Crack in eggs in a bowl and stir
  2. Add a tablespoon of oil to a pan and let it heat up
  3. Pour in the eggs and scramble until half cooked
  4. Add in day old cold rice and stir with the eggs
  5. Set rice and egg mixture to the side of the pan and add spring onions, then combine together
  6. Add soy sauce and sesame oil
  7. Season with white pepper 
  8. Serve in a bowl and garnish with more spring onions or other food of choice
  9. Serve hot and enjoy!

Egg fried rice is a staple dish in many Asian households and for good reason. It’s quick, easy, and incredibly satisfying. It has always been one of my favorite go-to meals, especially when I need something warm and comforting without much effort.

This recipe saved me countless times during my college days when I was too tired to think about what to cook. It became my go-to when I needed something filling but didn’t want to spend too much time in the kitchen. What’s even better is how versatile it is—you can throw in any protein you have on hand, whether it’s leftover chicken, shrimp, or even tofu, and it still turns out amazing.

It’s also a great way to use up leftover rice and random ingredients sitting in the fridge. No matter how many times I make it, it always hits the spot, bringing that familiar homemade comfort in every bite.
